My Mom's Rolls

  • Total time: 3 Hours
  • Servings: 2 Dozen

Ingredients

  • 1 1/2 Cups Milk
  • 1/2 Cup (1 Stick) Butter or Margarine
  • 1/4 Cup Sugar
  • 2 Tbsp Yeast (see note)
  • 1/2 Cup Very Warm Water
  • 1 tsp Sugar
  • 2 tsp Salt
  • 2 Eggs
  • 6 Cups Flour (approximate)

Directions

  • 1)

    Heat milk with butter or margarine, sugar and salt in small saucepan (or microwave) til butter melts – melt to lukewarm.

  • 2)

    Sprinkle yeast into very warm water in a large bowl. Stir in 1 tsp sugar til it dissolves. Let stand til bubbly and double in volume; about 10 minutes.

  • 3)

    Stir in cooled milk mixture and beat in eggs. Beat in enough flour to make soft dough. Knead on floured surface about 5 minutes til smooth and elastic, adding only enough flour to keep dough from sticking.

  • 4)

    Place dough in greased bowl; turn to bring greased side up. Cover with clean towel. Let rise in warm place 1 hour or til double in bulk.

  • 5)

    Punch dough down, divide into quarters, shape into balls, place on greased pan. Cover (optional). Let rise 45 minutes or doubled.

  • 6)

    Bake at 375°F for 15-20 minutes or until golden. Brush tops lightly with butter or margarine.

Notes

I think this recipe calls for too much yeast. I usually reduce to 1 1/2 Tbsp, but also think just 1 Tbsp would be sufficient.
