Lemon Curd

  • Total time: 30 Minutes
  • Servings: 4-6 Servings

Ingredients

  • 8 Tbsp (112g) Butter, salted
  • 1 Cup (200g) Sugar
  • Zest of 4 Lemons, chopped fine
  • Juice of 4 Lemons
  • 4 Whole Eggs and 2 Egg Yolks, beaten

Directions

  • 1)

    In a medium saucepan, melt the butter on low.

  • 2)

    Add the sugar, then the lemon zest, lemon juice, and eggs, in that order.

  • 3)

    Over low heat, stir the mixture gently until it thickens enough to coat the back of a wooden spoon without running off.

  • 4)

    Remove the mixture from the heat and let it cool, then refrigerate it.
