Lemon Curd

Ingredients
- 8 Tbsp (112g) Butter, salted
- 1 Cup (200g) Sugar
- Zest of 4 Lemons, chopped fine
- Juice of 4 Lemons
- 4 Whole Eggs and 2 Egg Yolks, beaten
Directions
- 1)
In a medium saucepan, melt the butter on low.
- 2)
Add the sugar, then the lemon zest, lemon juice, and eggs, in that order.
- 3)
Over low heat, stir the mixture gently until it thickens enough to coat the back of a wooden spoon without running off.
- 4)
Remove the mixture from the heat and let it cool, then refrigerate it.
