Easy Beef Enchiladas

Ingredients

  • 1 lb Lean (at least 80%) Ground Beef
  • 2 Cans (10 oz) Red Enchilada Sauce
  • 1 Can (4.5 oz) Chopped Green Chiles
  • 8-9 (6-8 inch) Flour Tortillas
  • 2 Cups (8 oz) Shredded Cheddar or Four Cheese Mexican Blend

Directions

  • 1)

    Preheat the oven to 375°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.

  • 2)

    In a large skillet, brown the ground beef over medium-high heat. Remove from heat and drain the excess fat away. Stir in 1/2 cup of enchilada sauce and the green chiles. Divide meat mixture evenly into the number of enchiladas you plan to make.

  • 3)

    Spread about 1/2 cup of the enchilada sauce evenly in the baking dish.

  • 4)

    Warm the tortillas according to the package directions. Add the meat mixture down the center of each tortilla and top with about 1 heaping tablespoon of cheese. Tightly roll each tortilla up and place them in the dish, seam side down. Pour the remaining enchilada sauce over them and sprinkle the remaining cheese over.

  • 5)

    bake for 25 to 35 minutes, or until hot and bubbly. Let stand 5 minutes before serving.

Notes

You can add toppings after baking such as diced tomatoes, fresh cilantro leaves, green onions, or diced avocado.
