Breakfast Casserole

Ingredients

  • 7 Slices White Bread, good quality with crusts removed
  • 1/2 Cup Milk
  • 15 Eggs
  • 1 Cup Velveeta Cheese
  • Sausage or Bacon, cooked and cut to bite-size pieces

Directions

    Cut bread into bite-size pieces and place in buttered baking dish.

  • 2)

    Beat eggs and 1/4 cup milk. Pour over bread.

  • 3)

    Heat Velveeta and rest of milk in microwave until melted. Pour over egg mixture.

  • 4)

    Sprinkle with sausage or bacon (in our case we have some sausage lovers and some bacon lovers so I usually make one of each).

    Bake covered at 325°F for 25-35 minutes or until center is firm. If the edges start to brown too fast, remove from oven and finish cooking, 2 minutes at a time, in the microwave.

    Casserole can be made a day ahead and will keep well overnight in the refrigerator. This also keeps really well in the freezer. I usually prepare a week ahead and freeze. When you bake frozen, plan on an hour baking time.
