Recipe used by Anna’s family for aebleskivers that Anna’s grandfather would make every Christmas morning.

The Famous Aebleskivers Recipe

  • Total time: 1 Hour

Ingredients

  • 3 Cups Flour
  • 2 Tbsp Sugar
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 6 tsp Baking Powder (level)
  • 2 Cups Buttermilk
  • 3 Eggs, separated

Directions

  • 1)

    Sift dry ingredients.

  • 2)

    Add buttermilk and egg yolks and mix well.

  • 3)

    Beat egg whites until stiff and fold into the batter.

  • 4)

    Allow batter to stand at least half an hour.

  • 5)

    Heat aebleskiver pan and fill cups 1/2 full with cooking oil. Be careful not to overheat pan (regulate heat. I set dial about halfway).

  • 6)

    Add a level spoon full of batter to each cup (about the size of a teaspoon). Turn when brown. Be sure and keep oil level up (when the oil is below 1/4 full). If you have to fill too much you will have to let oil get up to proper heat again.
