Southern Pecan Pie

Ingredients
- 1 Cup Chopped Pecans
- 1 1/2 Cups Whole Pecans (or chopped - then you need some more really pretty whole ones for garnish)
- 4 Eggs, slightly beaten
- 1/4 Cup Melted Butter
- 3/4 Cup Light Corn Syrup (no substitutes)
- 7/8 Cup Granulated Sugar
- 1 tsp Vanilla Extract
- 1/4 tsp Maple Extract
- 1 unbaked Basic Pie Crust
Directions
- 1)
Mix all ingredients except pecans. Reserve 1 cup of mixture, fold chopped (or whole) pecans into remainder. Pour into shell.
- 2)
Arrange whole pecans in circles on surface of filling. Gently spread reserved filling over whole pecans.
- 3)
Cover edges of pastry with foil strips (shiny side out) for 1/2 of baking.
- 4)
Bake at 350°F for 45-60 minutes.
