Southern Pecan Pie

Ingredients

  • 1 Cup Chopped Pecans
  • 1 1/2 Cups Whole Pecans (or chopped - then you need some more really pretty whole ones for garnish)
  • 4 Eggs, slightly beaten
  • 1/4 Cup Melted Butter
  • 3/4 Cup Light Corn Syrup (no substitutes)
  • 7/8 Cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Maple Extract
  • 1 unbaked Basic Pie Crust

Directions

  • 1)

    Mix all ingredients except pecans. Reserve 1 cup of mixture, fold chopped (or whole) pecans into remainder. Pour into shell.

  • 2)

    Arrange whole pecans in circles on surface of filling. Gently spread reserved filling over whole pecans.

  • 3)

    Cover edges of pastry with foil strips (shiny side out) for 1/2 of baking.

  • 4)

    Bake at 350°F for 45-60 minutes.
