Soupe au Pistou

  • Total time: 30 Minutes
  • Servings: 4 Servings

Ingredients

  • 2 Zucchini, skin on
  • 5-6 Cloves Garlic, crushed
  • 1 Russet Potato (or 2-3 smaller potatoes), skin off, cubed a little bigger than a dice
  • Onion Powder, optional
  • 1/2 Bag Frozen French Green Beans (such as from Trader Joe's)
  • Vegetable Broth (enough to cover the other ingredients)
  • 1 Can Cannelloni Beans (or other white beans), rinsed
  • Elbow Pasta, optional
  • 1 Jar Pesto (such as Barilla, or homemade)
  • Frozen Peas

Optional Toppings

  • Fresh Crushed Garlic (additional), on the side
  • Parmesan

Directions

  • 1)

    In a soup pot add zucchini, garlic, potato cubes, onion powder and green beans and cover with vegetable broth. Cook until potato cubes are tender.

  • 2)

    Add cannelloni beans and elbow pasta (if using, skip for a lighter meal). Cook 10 minutes or until pasta is done.

  • 3)

    Add pesto.

  • 4)

    Serve in bowls. Add frozen peas directly in the hot bowls so they keep their crunch.

  • 5)

    Add any optional toppings and serve.

Notes

Pistou is the provençal (dialect from Provence) word for pesto.
