Soupe au Pistou

Ingredients
- 2 Zucchini, skin on
- 5-6 Cloves Garlic, crushed
- 1 Russet Potato (or 2-3 smaller potatoes), skin off, cubed a little bigger than a dice
- Onion Powder, optional
- 1/2 Bag Frozen French Green Beans (such as from Trader Joe's)
- Vegetable Broth (enough to cover the other ingredients)
- 1 Can Cannelloni Beans (or other white beans), rinsed
- Elbow Pasta, optional
- 1 Jar Pesto (such as Barilla, or homemade)
- Frozen Peas
Optional Toppings
- Fresh Crushed Garlic (additional), on the side
- Parmesan
Directions
- 1)
In a soup pot add zucchini, garlic, potato cubes, onion powder and green beans and cover with vegetable broth. Cook until potato cubes are tender.
- 2)
Add cannelloni beans and elbow pasta (if using, skip for a lighter meal). Cook 10 minutes or until pasta is done.
- 3)
Add pesto.
- 4)
Serve in bowls. Add frozen peas directly in the hot bowls so they keep their crunch.
- 5)
Add any optional toppings and serve.
Notes
Pistou is the provençal (dialect from Provence) word for pesto.
