Polka Dot Peach Pie

Ingredients
- 5 Cups Sliced Peaches (can use frozen ones that have been thawed)
- 1 1/2 Cups Frozen Raspberries
- 1 1/3 Cups Sugar
- Pinch of Salt
- 2 Tbsp Cornstarch
- 2 Tbsp Flour
- 1/8 tsp Cinnamon
- 1/4 tsp Peach Extract
- 2 Tbsp Butter
- Pastry for a Double Crust 9 inch Pie
Directions
- 1)
Mix sugar, salt, cornstarch, flour and cinnamon.
- 2)
Combine peaches, peach extract and raspberries.
- 3)
Fold dry ingredients into peaches and raspberries.
- 4)
Pour into bottom crust. Dot with butter. Adjust top crust, vent and flute.
- 5)
Cover edge with foil strips for half the baking time (shiny side out).
- 6)
Bake at 350° for 50 minutes.
Notes
Auntie Lorayne notes that you can substitute 1/3 Cup (rounded) of Clear Gel for the Cornstarch and Flour. You can also substitute 1/4 tsp of Butter Extract for the 2 Tbsp of Butter.
