Polka Dot Peach Pie

Polka Dot Peach Pie

  • Total time: 2 Hours
  • Servings: 1 Pie

Ingredients

  • 5 Cups Sliced Peaches (can use frozen ones that have been thawed)
  • 1 1/2 Cups Frozen Raspberries
  • 1 1/3 Cups Sugar
  • Pinch of Salt
  • 2 Tbsp Cornstarch
  • 2 Tbsp Flour
  • 1/8 tsp Cinnamon
  • 1/4 tsp Peach Extract
  • 2 Tbsp Butter
  • Pastry for a Double Crust 9 inch Pie

Directions

  • 1)

    Mix sugar, salt, cornstarch, flour and cinnamon.

  • 2)

    Combine peaches, peach extract and raspberries.

  • 3)

    Fold dry ingredients into peaches and raspberries.

  • 4)

    Pour into bottom crust. Dot with butter. Adjust top crust, vent and flute.

  • 5)

    Cover edge with foil strips for half the baking time (shiny side out).

  • 6)

    Bake at 350° for 50 minutes.

Notes

Auntie Lorayne notes that you can substitute 1/3 Cup (rounded) of Clear Gel for the Cornstarch and Flour. You can also substitute 1/4 tsp of Butter Extract for the 2 Tbsp of Butter.
