Nonni's Sweet Potatoes

- Servings: 1 9x13 Pan
Ingredients
- 3-4 Extra Large Cans of Sweet Potatoes (preferably Princella brand)
- 2 Eggs
- 2 tsp Sugar
- 1 tsp Salt
- 1/4 tsp Nutmeg
- 1 tsp Cinnamon
- 3/4 Cup Milk
- 3 Tbsp Butter
- 1 Grapefruit, cut in half and sectioned
- Brown Sugar
Directions

Preheat oven to 350°F.
- 2)
Open the cans of sweet potatoes and drain off juice. Trim potatoes if needed. Put potatoes in a large mixing bowl.

Beat the eggs and add to potatoes.
- 4)
Mix together the sugar, salt, nutmeg, and cinnamon, Add to potatoes.
- 5)
Heat milk and butter until melted. Add to potatoes and mix all ingredients together.

Butter or grease a 9×13 casserole pan.
- 7)
Spoon half of the potatoes into the pan, spread evenly. Top with half of a sectioned grapefruit and juice and sprinkle with brown sugar.

Layer the other half of the potatoes and top with the other half of the sectioned grapefruit and juice and sprinkle with brown sugar.
- 9)
Bake uncovered for 45 minutes.
Notes
A 15.5oz can contains approximately 2 cups of sweet potatoes. One cup of canned sweet potatoes equals one medium-sized, cooked, fresh sweet potato.
