Everyday Food Mac and Cheese Cups

Ingredients

Pasta:

  • 2 1/2 Cups Milk
  • 2 (8 oz) Packages Cream Cheese
  • 1 lb Cheddar Cheese, shredded and divided
  • 1 lb Macaroni, cooked al dente
  • Salt and Pepper, to taste

Topping:

  • 2 Tbsp Butter, melted
  • 1/2 Cup Panko Bread Crumbs
  • 1/2 Cup Cheddar Cheese, shredded

Directions

  • Bring milk to a boil in a large saucepan, stirring constantly. Add cream cheese and whisk until it dissolves. Once it’s completely smooth and melted, add all except 1/2 cup of the cheddar cheese. After it’s all melted and bubbly, add to the macaroni and stir until it’s fully coated.

  • Scoop pasta into 24 well-greased muffin cups (can also use paper liners sprayed with non-stick spray), in about 1/3 cup portions.

  • Prepare the topping by mixing together the melted butter and bread crumbs, then mix in the 1/2 cup of cheddar cheese reserved from the pasta sauce. Sprinkle on top of the pasta.

  • Bake in 350°F oven for about 20 minutes until they’re bubbling and golden brown. After you take them out of the oven, let them sit in the muffin tins for about 10-15 minutes to give them time to solidify before removing them.
