Easy Lemon Curd

Ingredients
- 4 Large Eggs
- 1 Cup Granulated Sugar
- 1/2 Cup Fresh Squeezed Lemon Juice, from one large lemon
- 1 Tbsp Lemon Zest, from one large lemon
- 6 Tbsp Unsalted Butter, cubed
Directions

Place eggs and sugar into a small pot, whisk to combine.
- 2)
Add lemon juice, zest, and butter.
- 3)
Cook over medium-low heat whisking constantly until mixture thickens and coats the back of a spoon.
- 4)
Transfer to a glass bowl and lay plastic wrap directly on the surface to prevent a skin from forming.
- 5)
Chill for 2 hours to set.
Notes
The curd will last for 1-2 weeks in the fridge or can be frozen for 3 months.
