Easy Lemon Curd

  • Total time: 2 Hours 30 Minutes
  • Servings: 2 Cups

Ingredients

  • 4 Large Eggs
  • 1 Cup Granulated Sugar
  • 1/2 Cup Fresh Squeezed Lemon Juice, from one large lemon
  • 1 Tbsp Lemon Zest, from one large lemon
  • 6 Tbsp Unsalted Butter, cubed

Directions

  • 1)

    Place eggs and sugar into a small pot, whisk to combine.

  • 2)

    Add lemon juice, zest, and butter.

  • 3)

    Cook over medium-low heat whisking constantly until mixture thickens and coats the back of a spoon.

  • 4)

    Transfer to a glass bowl and lay plastic wrap directly on the surface to prevent a skin from forming.

  • 5)

    Chill for 2 hours to set.

Notes

The curd will last for 1-2 weeks in the fridge or can be frozen for 3 months.
