Date Sweetened Chocolate Chip Cookies

Date Sweetened Chocolate Chip Cookies

  • Total time: 20 Minutes
  • Servings: 12 Cookies

Ingredients

  • 12 Pitted Dates
  • 1 Cup Walnuts or Pecans
  • 1 Egg
  • 1 tsp Vanilla
  • 1/8 tsp Salt
  • 1/4 tsp Baking Soda
  • 4 oz Dark Chocolate Chips

Directions

  • 1)

    Blend dates and walnuts in a food processor until finely ground. (It might start to form a paste, but conversely, don’t worry if it’s a little chunky.

  • 2)

    Add egg, vanilla, salt and soda and blend to combine.

  • 3)

    Fold in chips.

  • 4)

    Spoon onto parchment covered cookie sheets.

  • 5)

    Bake at 350°F for 9-11 minutes. You want them to just turn golden and yet still be soft in the middle.

  • 6)

    Let cool before serving.
