Dad’s Cowboy Cookies

Dad's Cowboy Cookies

  • Total time: 30 Minutes
  • Servings: 1-2 Dozen

Ingredients

  • 2 Sticks Unsalted Butter (or equivalent shortening), room temperature or slightly softened
  • 1/4 Cup Granulated Sugar
  • 3/4 Cup Dark Brown Sugar
  • 1 3.4oz Package Instant Pudding Mix (vanilla is good but any flavor you wish)
  • 1/2 tsp Vanilla
  • 2 Large Eggs
  • 1 1/4 Cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 3/4 tsp Salt
  • 3 1/2 Cups Oats (quick or old fashioned)
  • 1/2 Cup Sweetened Coconut
  • 1 Cup Peanuts (chopped)
  • 1 Cup Chocolate or Other Chips or Raisins, if desired (dad doesn't add them)

Directions

    Preheat oven to 375°F.

    Line baking sheets with parchment paper or silicone sheets or cooking spray.

  • 3)

    In large mixing bowl, beat the butter until creamy then add both sugars and vanilla and beat until creamy.

  • 4)

    Beat in the pudding mix then add eggs and beat until just blended.

  • 5)

    In a separate bowl, mix together the flour, soda and salt. Stir this flour mixture into the butter mixture until blended.

  • 6)

    Stir in the oats, coconut, peanuts and chocolate chips.

  • 7)

    Scoop dough into desired cookie size, roll into balls and place 2 1/2″ apart on cookie sheet. Press tops down slightly.

  • 8)

    Bake one sheet at a time on center oven rack for 10 to 15 minutes until nicely browned.

  • 9)

    Remove cookies from baking sheet and let cool completely.
