Classic Risotto

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Medium Onion, chopped
  • 1 Cup Arborio Rice
  • 4 1/2 to 5 Cups Chicken Broth
  • 1/4 Cup Parmesan Cheese

Directions

  • 1)

    Place chicken broth in a large saucepan and place on medium high heat until broth is hot but not boiling, then reduce heat to simmer.

  • 2)

    In a large skillet, sauté onion in olive oil over medium heat, until onion is softened.

  • 3)

    Add rice and sauté 1-2 minutes until grains are coated.

  • 4)

    Add hot broth one ladle-full at a time, stirring after each addition until broth is absorbed. Continue this process until rice is fully cooked and creamy.

  • 5)

    Remove from heat, stir in cheese and serve immediately.
