Berry Bonanza Pie

Recipe from Auntie Lorayne. I made this once using frozen berries, omitting the pie tone, and increasing the cornstarch to 3 Tbsp. This wasn’t enough thickening to prevent the pie from being very soupy. If making again, I would thaw and drain the berries first and/or increase the thickening to 4 Tbsp.

Berry Bonanza Pie

  • Total time: 1 Hour 30 Minutes
  • Servings: 1 Pie

Ingredients

  • 2 Cups Water
  • 1 Cup Granulated Sugar
  • 1/3 Cup Pie Tone
  • 2 Tbsp Cornstarch
  • 1/4 Cup Water
  • Dash of Salt
  • 1/2 tsp Vanilla Extract
  • 4 Cups (1 lb) Mixed Berries (frozen works well)
  • 2 Tbsp Butter
  • Pastry for double crust 9 inch pie

Directions

  • 1)

    Bring water and sugar to a boil.

  • 2)

    Make paste of next 4 ingredients. Stir into boiling mixture, cook until thick.

  • 3)

    Fold in vanilla and fruit. Fill bottom crust. Dot with butter. Adjust top crust, vent and flute. Brush with milk and sprinkle with sugar.

  • 4)

    Cover with foil strips (shiny side out) for 1/2 baking time. Bake at 350°F for 50 minutes.
